Extreme Banana Bread!




 


This is not your typical banana bread.  Although the ingredients may be the same, this recipe packs 5 bananas in the batter (and one for the top).  It's quite possibly the best banana bread you will ever make!

Recipes for ultimate banana bread abound, but because they include an overload of bananas for flavor, the bread’s texture is often soggy. I wanted a moist, not mushy, loaf that tasted of banana through and through. Let's face it, it's banana bread, you're not painting a masterpiece! It's not a special occasion dessert, it's a very clever way to use over ripe banana's that would of been thrown out, into a pretty descent mid morning snack!

Easy Oatmeal Apricot Bars!

 

 I splurge every once in a while when I am shopping at Pasta and Co. in Bellevue, Washington and I buy a apricot bar. I love them and thought........Hmmmm I should make a few for my daughter, as she has been wanting sweets with oatmeal. She could have them for a yummy dessert or a fun breakfast treat. They are quite tasty and the apricot is a nice change of pace from my normal flavor palate. I made up a batch and served in a dessert buffet for a party we recently had, then, I packaged up the left over's and sent them home with her. She and Nate were so happy!

Lactation Chocolate Chip Cookies!





"This recipe is great for mothers who are breastfeeding. It helps to keep your milk supply up or increase your milk supply. Use more brewers yeast and oatmeal if you are wanting to increase your milk supply. You can use more chocolate chips if you like or any kind of chips," says Noel Trujillo. You can also safely eat these cookies during pregnancy in preparation for breastfeeding.

Rustic Cheese and Tomato Tart



 This tomato and cheese tart was incredibly simple to make, and it tasted so fresh! When I first told Wee Bear I was making a tomato tart, he gave me a funny look and said: “That doesn’t sound very good.” But when this came out of the oven, he was singing a different tune. It was more along the lines of “That smells amazing.” And the morning after the dinner? I believe the words that came out of his mouth were: “Where is the left over tart from last night?”  Suffice to say, this recipe is a winner – cheesy pastry, melty cheese, and warm summer tomatoes – you can’t beat it!

Irish Soda Bread~ St. Patrick's Day!



St. Patrick's Day is only 5 days away and that means that it is time to start planning your St. Patrick's Day menu. I always enjoy planning my St. Patrick's Day meal as the dishes are always interesting and "Oh so Tasty"! It is a great time to cook with some alcohol such as an Irish beer, stout or ale or an Irish whiskey or even some Irish cream. Corned Beef and Cabbage is of course a favorite for a main but there are plenty of options and lets not forget that there are some really delicious desserts...list and links below. If you do make some corned beef, be sure to make a lot because the leftovers for a Reuben sandwich can be even better than the dish that they came from.

Grand Marnier Soufflé!



Shoot cupids arrow straight to their heart with this delightful Grand Mariner soufflé with a Grand Marnier creme anglaise sauce!

 Soufflé is considered a very sophisticated dish, yet soufflé recipes are actually quite easy and simple to prepare. It's eggs and patience.......DONE! Soufflé recipes can be sweet or savory, but the principles of making them are the same. I have made dark chocolate souffle, Blue cheese souffle, Gruyere souffle, broccoli souffle and countless others. Eva Kenly said, "It's eggs, you can eat a souffle for breakfast"! And, I have many times, with a smile on my face...like I'm cheating, but I'm not, it's eggs!

Lemon-Lavender Pound Cake

We have some new neighbors that moved into the neighborhood and my girl-friend and I decided we would make a day of baking and present them with this wonderful cake. I found it on Pinterest but I added a couple different things to the batter. 

This pound cake is not overly sweet and the lavender gives it a wonderful fragrant smell and taste! I'm lucky to have several lavender bushes in my garden so I will have to get creative with baking with lavender! 

The glaze that is poured on top after it comes out of the oven is heaven as it gives it a sweet crunchy topping...uuh, yum! Next time I think I'll double the glaze recipe as it could be even better with a little more sweet tangy crunch on top. This cake is perfect in the morning with a cup of coffee or as an afternoon snack with a cup of tea. If you want to serve this up as an after dinner dessert, it would be lovely with a dollop of cream or a scoop of ice-cream.

JJ's Easy Raspberry Braid- Christmas Breakfast


Falalalalalalala! Another Family favorite! This beautiful and easy to make braid can be made by a youngster! Look's complicated....NOT! When my children were growing up, we had this every Christmas morning, for sure, but, many times throughout the year. I adapted the recipe from my long time German mentor, Eva Kenly. Left overs! For breakfast?


I just can't get enough turkey when Fall comes along!! I start off by buying turkey breast in September, trying different preparations, move on to thighs for casseroles or curry.  For my family, it doesn't end with Thanksgiving. Turkey for us, is the gift, that just keeps on giving!

What's your leftovers style? The obligatory turkey-stuffing-etc. sandwich? Throw an egg on those brussel sprouts? Repurpose the mashed potatoes into a family doughnut recipe? Or if you're craving spicy, ever tried a mouth-numbing Szechuan-style turkey dish? I dug up some leftovers recipes, so you can make the best of the gift that keeps on giving.

Pumpkin Bread

I recently bought a new fall inspired loaf pan at Williams Sonoma and decided to bake a pumpkin bread using it. It came out beautifully and the bread stayed moist for an entire week. Great with coffee in the morning! I was a little skeptical that the batter would stick in the grooves of the pattern, but a good spray of non-stick cooking spray turned the bread out perfectly. Next time I think I would give the finished bread a dusting of powdered sugar -I think that would look pretty over the pumpkin design.

Glazed Apple Cider Donuts






 Let me begin this post by saying how excited I am to share this doughnut recipe with you. What can I say? Doughnuts are exciting. They remind me of my childhood.....and my children's childhood, all fuzzy and warm with loving family.


Long story short: the doughnuts I’m sharing with you today are perfect for a child's Halloween party, a memory making activity with your children, or a gift for a neighbor or friend. Doughnuts are fun to make!

Easy Banana Bread!



Yum!   


 What do you do with all those over ripe bananas? I usually make up a batch of my yummy homemade granola (March 11, 2012 blog) or when I had children living at home, I made banana bread. The kids would come running through the door after school to a house filled with the aroma of this delicious banana bread. They would gobble down a couple of slices, and off they would go to play in the back yard. I have several versions of this recipe............mostly changing the type of nut. Feel free to use any nut or none at all!! In the Winter, I add pecans or even chocolate chips, for a heavier feel. I like all types of nuts, so each time I make it, it is different, depending on the flavor profile I am looking for or what I have on hand.
