Asparagus is in season! Yay! I have another tasty recipe for you that got lot's of good reviews at our Easter dinner. Very easy to prepare ahead.
Lemon Parmesan Asparagus
1 lb asparagus
2 T. olive oil
zest of one lemon
1/2 c. shredded Parmesan cheese
Salt and Pepper
Preheat oven to 425 F degrees
Place prepared asparagus on a large baking sheet, lined with parchment paper or a silpat. Drizzle with olive oil and toss until asparagus is coated.
Sprinkle lemon zest over the asparagus, then top with half the cheese.
Roast for 5-8 minutes or until it begins to sizzle.
Top with remaining cheese.
Saturday night was the annual Easter weekend dance at Outlaw clubhouse on property. Mogollan plays every year and pretty mush everyone comes dressed in their western clothes. We hosted our daughter, son in law, his parents and our grandchildren for this fun event!
