Swedish Meatballs! A FLASH BACK!!




 This is for Ross, our son-in-law. He said his Grandma used to make Swedish meatballs, I had a flashback!!! I used to make these little yummy balls for my family when I was in high school and continued making them after I was working in the 1970's. They are quick and yummy! I am not sure where my recipe came from, as I was in Home Economics in high school, and think possibly it came from class handouts?? I remembered a lot of the ingredients and tweeked it, to bring it into this decade!! 

Swedish Meatballs
  • 1 lb. ground beef
  • 1 C. minute rice
  • 1 egg, beaten
  • 2 T. minced onion 
  • 1 T. chopped parsley
  • 1 1/2 tsp salt
  • 2 T Worcestershire sauce
  • Dash of pepper
  • 1/2 C. milk
 Sauce:



  • 2 T. butter
  • olive oil
  • 1 1/2 tablespoons flour (any kind)
  • 1 cup chicken broth
  • 1/2 cup sour cream


  • 1. Combine egg, beef, rice, onion, parsley, salt, nutmeg, pepper and milk, mixing lightly but thoroughly. Shape into 24 small balls. Place in a skillet.
    2. Place olive oil in a skillet over medium-high heat. Brown the meatballs for about 10 minutes.
    3. Remove them and most of the fat. Stir the flour and the butter into the pan. Cook the flour for a minute...this prevents lumps.
    4. Slowly while stirring add the broth. Simmer until it thickens, about 2 minutes.
    5. Strain it with a sieve to remove any clumps. Return it to the pan.
    6. Reduce heat to low; stir in the sour cream.
    7. Return the meatballs to the pan for 1 minute.
