|This is how it looks, frequently! My salad, my lap top and my water!!|
I eat a salad almost every day. I grab a big bowl, then toss in whatever ingredients I have on hand. It might be chicken, left over steak, miscellaneous greens, green onions, beets, radishes, shredded cabbage, toasted nuts, cherry tomatoes, crumbled cheese, and so forth – whatever I have on hand. (But I hold the alfalfa sprouts; does anyone really like those?) I make a simple dressing in a measuring cup or salad dressing carafe and I am set.
Today, the first day of our "Figure Friendly Series 2014"! I have many request's to get back to "Back to health Monday". Here we go! On the first day of the New Year! I am sharing my go to salad if I am feeling a little pudgy! It is really tasty, fills me up and is low in calories and fat. When I made it the other day, I thought, I had blogged about it.........no.....I checked my 100 drafts...........no! I couldn't believe I hadn't shared this salad I have eaten for years!
Mandarin Orange Salad
6-8 c. baby spinach (or your favorite greens)
1 chicken breast sauteed (or left over chicken)
4 green onions, sliced
1 11 oz. can mandarin oranges
3/4 c. sliced toasted almonds
1/4 c. Champagne vinegar
1/3 c. grape seed oil
1 packet of sweetener (Equal, Sweet and Low, Stevia)
1/2 tsp salt
Combine vinegar, oil, salt and sweetener.
Mix everything together, dress and serve! Delish!
