Chicken Soup Skinny!



My figure friendly series is continuing. This soup is amazing! The cheddar biscuit is figure friendly as well!


Chicken Soup Skinny!

1/4 c. flour (gluten free use 2 T cornstarch)
1 can chicken broth (I use Swanson)
4 c. fat free or 1% milk
1 lg. celery stalk, chopped
1/2 c. chopped onion ( I used 1 cipolina)
8 oz. sliced mushrooms
1 T chicken demi glace optional ( William and Sonoma)
freshly ground pepper
1/4 tsp thyme
10 oz. frozen mixed vegetables or your favorites
10 ounces of cooked chicken cubed or shredded
2 small red potatoes, cubed
salt

Directions 

Combine 1/2 cup of the broth with flour in a medium bowl and whisk until well blended, to create a slurry. Set aside.


Pour remaining water and milk into a large pot and slowly bring to a boil.  celery, onion, mushrooms, thyme, fresh pepper, chicken demi-glace and return to a boil.



Partially cover and simmer on low until vegetables are soft, about 20 minutes. Remove lid, add in the potatoes and frozen vegetables, cook until soft, about 5 minutes. Add the chicken, and slowly whisk in the slurry, stirring well as you add. Cook another 2-3 minutes, until soup thickens, adjust salt and pepper to taste and serve.
