Superbowl! Let's change it up a bit! This idea hit me when I was frying pork schnitzel for dinner the other night. Wee Bear and I love pork schnitzel and I got to thinking, why not make a slider with it for a party!

Pork Schnitzel sliders are delicious and a great addition to the individual plates!
Blue Cheese Dip Buffalo Cauliflower Bites
Pork Schnitzel Sliders
3 boneless thick cut pork chops
1/3 cup all purpose flour
1 1/2 tsp salt
1/2 tsp pepper
1/2 tsp. paprika
2 eggs beaten
2 cups bread crumbs
Light Olive oil or vegetable oil
12 slider buns- I used pretzel buns
lettuce or arugula
Trim any fat off pork chops. Slice each pork chop horizontally, to make 6 thin porkchops. If you have started with really tick pork chops, you can pound them out with a mallet between two sheets of plastic wrap. Then cut the 6 chops vertically, so they are just right for a slider roll. You will have 12 small chops.
In a shallow bowl whisk the eggs. In another bowl combine the flour, salt, pepper and paprika. In a third shallow bowl, put the bread crumbs.
I use one hand to dip each chop into the flour, then the egg mixture and lastly the bread crumbs. Place on a baking sheet.
In a deep skillet, pour the oil in, covering the bottom. Heat over medium heat to hot. When sizzling happens. Place pork chops into pan, being careful not to crowd them. You may have to do this in two or three batches. Fry for 3-4 minutes until golden brown and flip, fry to golden brown on both sides. If browning too fast, turn the heat down.
Remove the chops to paper towel lined plate and cover with foil or put into a warming drawer.
1 cup mayonaise
2 cloves garlic, crushed
1 T lemon juice
1/2 tsp. salt
1 Tablespoon + 1 tsp olive oil
1/2 tsp. pepper
Make early in the day or a day ahead.
Mix together all the ingredients. Refrigerate for at least 1 hour to allow the flavors to meld.
Slather the aioli on the buns, put a chop on and top with arugula or lettece and a slice of tomato.
