BLT Stuffed Mushrooms



Pretty sure these delicious KETO friendly stuffed mushrooms will be a hit at the next party! Yes, Superbowl is around the corner and some of us are still taking off that holiday bulge! Whether you are or not, it doesn't matter, everyone loves this delicious dish!





BLT Stuffed Mushrooms

Garlic Butter

4 T unsalted butter
4 crushed garlic cloves
1 T chopped parsley



Mushrooms

6-10 button mushrooms, stem removed, washed and dried with a paper towel(can also use small portabella mushrooms)
1 cup grated mozzarella cheese or mozzarella cheese balls, sliced
1/2 cup crumbled bacon
1 cup cherry tomatoes, cut in half or quarters depending on size
fresh basil, cut into shreds (roll the leaf, cut cross way) you can use parsley, chives or butter lettuce

Preheat oven to high broil.

Put baking shelf in middle of oven.

Combine the butter, garlic and parsley in a small sauce pan, melt until garlic is fragrant (this also can be done in a glass bowl in microwave)

Brush the bottom of each mushroom and place them butter side down on a baking sheet. Brush top side with butter.

Fill each mushroom with the tomatoes, a sprinkle of bacon and top with mozzarella.

Broil until the cheese melts 6-8 minutes.

Top with basil and a sprinkle of salt if desired.
