Instant Pot Halftime Chili


This delicious chili was a winner in the Bon Appetit recipes sweepstakes, a reader poll conducted in honor of their 50th anniversary. I have adapted this yummy recipe to the Instant Pot! 


On a recent holiday to the mountains for a week of snowmobiling with family and friends I made this chili.....it was a monster hit with everyone! Not so many beans in this one....it's a meat eater's delight!

Instant Pot Halftime Chili

2 T Olive oil
1 1/2 cup chopped onion
8 large garlic cloves, chopped (I use the Trader Joe frozen chopped garlic, 8 cubes)
3 lbs. ground beef
5 T chili powder ( I used 6 T)
1 T ground Cumin
1 tsp. dried Basil
1/2 tsp. dried Oregano
1/2 tsp. dried Thyme
1- 28 ounce can crushed tomatoes with added puree
1- 14 1/2 ounce can low salt chicken broth
1- 12 ounce bottle of beer
1- 6 ounce can tomato paste
1- 15-16 ounce can prepared chili beans

Heat oil in the Instant pot on saute. Add the onions and saute for 2-3 minutes, add the garlic and saute until onions are translucent, about 7-8 minutes. Add the ground beef and saute until brown, breaking up the meat, about 5 minutes. Add the chili powder, cumin, basil, oregano and thyme. Stir for 2 minutes. Mix in the crushed tomatoes, chicken broth, beer, beans and tomato paste. 


Put the lid on the Instant pot and close the valve. Press the "chili/bean" button if you have one on your Instant pot or press the "high pressure" button, put the timer to 25 minutes. When finished, do a "natural release". Remove the lid and  season to taste with salt and pepper.



This can be frozen in a freezer container or refrigerate.

We had such fun snowmobiling, playing games and making meals together. This lovey blanket photo was taken on the veranda of the cabin on our 22nd anniversary (New Years Eve)!
