Instant Pot Crispy Carnitas


Are you ready for some football! I am and look what I made for the first pre season game! Wee Bear nearly ate it all before I could serve it! So quick to make in your IP!



Instant Pot Crispy Carnitas 

1 4- 5 lb boneless pork roast, cut into 2 inch chunks
2-3 T olive oil
salt and pepper
1 recipe JJ juice (recipe below)

JJ Juice

1 c. chicken stock
6 cloves of garlic minced (or 6 cubes of frozen garlic, found at Trader Joes)
1/4 c. fresh lime juice
1/2 c. fresh orange juice
1 tsp. salt
1 tsp. ground cumin
1 tsp oregano
1/2 freshly ground pepper



Mix together all ingredients.

Instant Pot Method

Season the chunks of pork with salt and pepper. 



Using the saute on the IP, add the oil and saute the pork in batches in the hot oil. Removing the browned pieces to a clean plate or bowl.

A moment of honesty here- if I were to do this step again, I might either do it in a large skillet (more meat can go in) or not cut up the pork and just saute the whole roast, which would change the cooking time, then, I would crisp up the shredded pork under broiler unit of oven. Because there is not much surface, this step takes some time.

 When all pieces have a sear, turn off the saute button on your IP and pour in the JJ sauce, stir.

Press "meat", then "pressure", it should say "high pressure", adjust the time to 30 minutes. Let the IP do it's "Magic"!! When finished, let the pressure release naturally for 15 minutes. Turn the vent to release the remaining pressure. Remove lid to the glorious pork, that practically shreds itself!!

At this point, you can make your carnita's or you can add a extra crisp by putting on a rimmed sheet pan, adding a few ladles of juices and broiling on high for a few minutes.....watch it! Stir it a bit and add more juices, broil again! 

I use the best tortilla's I can find, about 6 inches across, and garnish my pork with Pico de Gallo, chopped onion, sliced avocado, slaw and cilantro! Delish!
