Parmesan Pasta Salad







Summer is in full swing, lot's of BBQ's and we are surrounded by our loving family and friends nearly every week! Reunions are happening, both family reunions and class reunions, it is a fun time of the year! 



If you have a gathering coming up and you want to take something that will have attendees begging for the recipe....this is it! Look no further! We have eaten this everyday since I made it, opening the refrigerator and scooping a bit into our mouth...yum!




Parmesan Pasta Salad



4 oz medium shells

4 oz large elbow

3/4 cup cucumber, diced

3/4 cup red onion, diced

Red pepper, diced

garnish with 1 T cilantro

season to taste 1/4 tsp salt
1/4 tsp. white pepper 




Creamy Parmesan sauce: 

1/4 cup mayonnaise

1/4 cup sour cream

1 T lemon juice

1/4 tsp grated garlic

3/4 cup finely grated Parmesan cheese

season to taste with salt and white pepper



Prepare the sauce, set aside to allow the flavors to marinate.  Prepare your noodles according to package directions (don't forget to salt your water), drain and rinse in cold water.  In a large bowl, add everything and toss in dressing.  Garnish with cilantro.  You could refrigerate this, if you want, allowing the flavors to really come together.  But with something this good, you won't want to wait.

We are enjoying our Summer in Seattle with family and friends. The weather has been beautiful and we have been socializing a lot! We also have tackled a facelift to our 11 year old home, refinishing the walnut floors, re carpeting, complete exterior paint, interior doors repainted, reorganizing cabinets, deep cleaning everything including taking apart our 300 piece glass chandelier washing the pieces and placing them back!! YIKES!!! We also have a furniture re-finisher doing a keepsake coffee table that Wee Bears mother made and a bombay chest I bought some 40 years ago. It is busy at JJ's house with all this going on, but, we are so happy, it is going smoothly with the sub's that we organized and hired.
