Gorgonzola Gnocchi


As the weather begins to cool, I find myself drawn to dishes that are warm, comforting and just a little indulgent. This Gorgonzola Gnocchi checks every box- soft ad pillowy gnocchi wrapped in a creamy Gorgonzola sauce and finished with toasted walnuts for the perfect bit of crunch.

 

The Gorgonzola melts beautifully into the cream, creating a silky sauce with just the right amount of tang. The toasted walnuts on top add a wonderful nutty flavor and texture that balances the richness of the sauce. It's simple enough for a cozy weeekend dinner, yet special enough to serve to friends.

Add a crisp green salad with some pear or apple slices, some crusty bread and a nice glass of red wine, and you have a lovely Fall dinner. 


Gorgonzola Gnocchi

Salt

1 1/2 cup cream

2 T unsalted butter

8 ounces of crumbled Gorgonzola 

Freshly ground pepper

Freshly grated nutmeg

1 1/2 lb. freshly made gnocchi or store bought

1/2 cup toasted walnuts 

 Bring a large pot of salted water to a boil. Meanwhile, warm the cream and melt butter in a large skillet over medium heat. Stir in Gorgonzola cheese. 

Mix until the cheese is melted and the sauce is smooth. 

Taste......season with salt and pepper, and grated nutmeg.

Reduce the heat to low and continue to cook until the sauce is rich and thick, 3 to 4 minutes more. Meanwhile, add the gnocchi to the boiling water and cook according to gnocchi recipe or package instructions, they should be tender. Drain the gnocchi.

Gently stir the drained gnocchi into the sauce to coat with the thick yummy sauce. 

Divide the gnocchi into warm bowls and top with the toasted walnuts.

 * you can substitute toasted walnuts with skinned toasted hazelnuts or carefully toasted pine nuts. 

*you can store in a sealed container for 3-4 days in refrigerator.

*Reheat gently- a double boiler or short spurts of the microwave alternating with stirring. If too thick, add a touch of cream. 

Creamy, savory and topped with those crunchy toasted walnuts, this is the kind of pasta dish that makes a cool Fall evening feel especially cozy. Pour the wine, light the candles and settle in for a dinner meant to be enjoyed slowly.....
