Are you chickened out? You know what I mean, chicken this...chicken that. Bored of the ho-hum chicken again for dinner? Well, you can say goodbye to that boring, ho-hum chicken and say hello to Chicken Breasts with Mushroom Sauce. Well, now I sound like a car dealer...hahaha! But, this chicken is better than any car....it is scrumptious and moan worthy! Let me tell ya....the hubster was moaning....let me tell you how this happened.
I started with a age old recipe and just started playing with it. After a bit of sauteing, simmering and fiddling, tasting and tweeking it was born. And holy moly this easy chicken breast recipe with mushrooms and a delectable cream sauce is some kind of goodness, far and away from boring or ho-hum. The savory cream sauce combined with chicken and mushrooms, is most satisfying.
Chicken Breast with Mushroom Cream Sauce
1/3 cup all purpose flour
1/2 tsp. salt
1/4 tsp. freshly ground pepper
2 organic skinless chicken breasts
3-4 Tablespoons olive oil
10 ounces sliced mushrooms
3-4 garlic cloves minced
2 cup chicken stock
3/4 cup heavy whipping cream
Combine the flour, salt and ground pepper in a bowl.
Dredge the chicken breasts in the flour mixture, making sure they are evenly covered.
Heat the olive oil in a large skillet over medium/high heat. Brown the breasts in the olive oil and set the breasts aside.
In same skillet saute the mushroom with the garlic until tender and fragrant.
Pour the chicken stock into the skillet, scraping up any browned bits from the bottom. Season with salt and pepper and add the breasts back into the skillet.
Simmer for about 20 minutes or until chicken is fully cooked.
Bring the mixture to a boil and reduce the stock to just under 1/2 cup (no measurement needed, approximately) Stir in the heavy cream and continue to simmer until the sauce thickens.
To serve- You can serve with basmati rice, mashed potatoes and garnish with fresh herbs.
Lot's of fun at Grandma and Grandpa's house! This Summer brought us lot's of family and friends staying with us most of the Summer. Our three ensuite guest rooms filled and at one point a tent pitched on the roof top deck with two grandson's sleeping inside! What fun, what laughter! The grands enjoyed the huge blow ups out in front, jumping off the cliff rocks at Tubb's hill, the jet ski's and tubing and wake boarding behind our pontoon boat. Somehow I fit a couple golf tournaments in and played with my girls groups, family, friends and with the hubster.
We drove to the Seattle area for a few days and I enjoyed seeing my classmates for our 55th class reunion. It was classy and fun with live music and lot's of laughter, dancing and catching up. (we missed our 50th, covid)
My little garden has been over producing tomatoes, rhubarb, cauliflower, green beans, radishes, zucchini, cucumbers and of course several pumpkins for the grands to take home. We have made a couple trips to the food bank giving them produce. However, we have enjoyed lots of sides with our dinners on the veranda.
