This homemade Vanilla Ice Cream is some of the creamiest ice cream I have ever made, I chopped up some candy canes in the food processor and added a swirl after churning. This is worlds away from the mint-flavored ice creams you can find in a store. This is pure vanilla with real peppermint flakes without a hint of a chemical or mass produced flavor.
I found some Holiday cartons at my local Safeway and guess who's receiving my delicious homemade ice cream?? Well, it is a few of our friends who are coming to our home for a two on two dinner at our 10 person table. A little different, but, safe and everyone feels comfortable with a door open and 3 Honeywell air purifiers. My take away gift for our friends, a carton of Vanilla ice cream with peppermint swirl, Pork Piroshky and Extreme Chocolate chip cookies all wrapped up and ready to bake when they want them. Perfect for a day when they need a pick me up from wrapping gifts, or just want to relax and not cook.
Here is my delicious recipe!
1 c. Whole milk
1 c. granulated sugar
pinch of salt
5 large egg yolks
2 1/4 c. Heavy cream
2 Tsp. Pure Vanilla extract
1/2- 3/4 c. crushed candy canes
Heat the milk, salt and sugar in a heavy saucepan.
Set up a ice bath with a 2 quart bowl in a larger bowl partially filled with ice and water. Set a strainer over the center bowl and pout in the cream.
In a separate bowl, whip together the egg yolks with a fork. Pour some of the warm milk mixture into the whipped egg yolks, whisking as you pour. Scrape the warmed yolks and milk back into the saucepan and cook over low heat, stirring constantly and scraping the bottom of the pan with a heat resistant spatula. when the mixture thickens and coats the back of a spoon, strain into the heavy cream. Stir over ice until cool. Add vanilla and refrigerate the mixture thoroughly, preferably over night.
Process in your ice cream maker according to manufacturer's instructions.
Crush the candy canes in a food processor or by hand using a meat tenderizer.
Once the ice cream is processed, swirl in the crushed candy canes.
Serve alone or with JJ's Hot Fudge Sauce.
