Instant Pot Chicken Lentil Soup




If you are looking for a delicious soul warming soup, this is it! I made this a few weeks ago for the family, it was gone in minutes!



 Instant Pot Chicken Lentil Soup
 made in a Duo 6
2 T. canola, safflower or grapeseed oil
1 medium onion, diced
1 cup uncooked lentils, rinsed
1/2 cup quick cooking oats
2 large potatoes, diced
1 large carrot chopped
6 cup chicken stock
1 1/2 tap salt
1/4 tsp ground pepper
1/2 lb. chicken breast, uncooked
1 cup half and half (can use non fat)

Saute onion until translucent. Put in the potatoes, carrots, lentils, oats, salt and pepper. Stir well and add the chicken breast. (If using cooked chicken, wait to add after the cooking)

Put the lid on and turn the valve to closed.

 Press manuel button and adjust time to 10 minutes.

When finished, allow for a 10 minute natural release.  Turn the valve to open to do a quick release.

Press the saute button. Stir in the half and half and bring to a boil. Turn off and serve with crusty bread! 


My daughter and I are enjoying our annual trip to Pearl. A wonderful hiking, yoga and cleanse type spa in Laguna Beach. We are working hard in the mornings and relaxing in the afternoons with a massage. We both enjoy this mother/daughter retreat near the ocean.
