Jamaica Inn Cheese and Potato soup




 
Last February on our annual holiday to Jamaica Inn, Chef Maurice Henry served us a delicious Cheese and potato soup. I was blown away by the deliciousness of this soup and found myself licking up every last drop. I later cornered Chef Maurice and asked if he would share his recipe. He did!!! Yay!! A few months later, I received the recipe in my e-mail. Thank you Chef Maurice Henry.





The simplicity of this soup and the ease with which it can made make it very appealing on a damp and chilly day. It's similar to a broccoli and cheese soup but much easier to make. You can have this one on the table in just about an hour. I have one caution to share with you, don not boil the soup after you add the cheese, it will not affect the flavor, however, it will become lumpy.


I wish I could put into words how much I adore this soup. For me potatoes and soup define comfort food, so when you combine the two...it's  like comfort heaven!!

I originally got the recipe from my sister-in-law a few years ago and it is supposed to be a copycat of Panera’s Baked Potato Soup. I don’t think it tastes like Panera’s version, I actually think it tastes better! Potatoes and soup define comfort food for me (and pasta and cheese too!), so when you combine them together, it’s like comfort food heaven! The best part about this recipe? It comes together fast, it’s easy, yet is so full of yummy baked potato goodness.

Cheese and potato soup
Chef Maurice Henry 
2lb Irish (red) potatoes peeled and diced
3 T. butter 
3 oz Onion diced
2 oz scallion chopped
1 sprig Thyme
1 oz Garlic chopped
10 oz Parmesan cheese grated
2 c. or ½ liter Heavy cream
8 c. or 2 liter Chicken stock or vegetable stock
1 dash Nutmeg
Salt and pepper to taste



In a pot sauté garlic, onion, scallion until tender add potatoes sauté a little longer.


 Add stock bring to a boil cook potato until soft remove from flame
Puree mixture  until smooth 


 Return to low heat whip in cheese and heavy cream. If too thick add stock.



 Add nutmeg, thyme, salt and pepper to taste.  

Not only will YOU enjoy this delicious soup, your children will love it too. If you are looking for a delicious soup recipe for the cold rainy days, look no further, this is a soup the whole family will enjoy! 

When I make this soup on a chilly day, I just imagine being in Jamaica where this soup was first introduced to me.....
