Pumpkin Soup with a surprise garnish!



We love pumpkins this time of year, particularly when they're roasted and whipped into a creamy, cold-weather soup. So thankfully there are many variations on this classic Fall meal that have shown up on several of the blogs lately. Try pumpkin and coconut milk (a classic), but also chipotle chocolate pumpkin soup, or a spicy southwest version. All it takes is a few new ingredients and you'll be tasting pumpkin in a whole new way. 

My pumpkin soup is tried and true, is simple clean with fresh flavors that will please even your Mother in law!! The popcorn garnish, well, it is just a little surprise!!

Four: Pumpkin Soup with popcorn garnish!

Start your Thanksgiving off with this yummy soup! It is over the top delicious! And so simple to make! It looks elegant and is an appealing addition to any holiday meal.


1 c. leeks, white part chopped
1/2 c. carrots, chopped
1/2 c. celery, chopped
4 T. unsalted butter
1 lb pumpkin puree fresh or canned
4 c. homemade chicken stock or a very good canned one
salt and pepper
1 c. half and half (fat free okay)
1 c. popcorn

In a large saucepan, saute leeks, carrots and celery in 4 tablespoons of buter until soft.


Stir in pumpkin puree, broth, salt and pepper. Simmer uncovered for 20 minutes.

Puree in either  a food processor or a blender. Return to pan and add half and half. Simmer for a few minutes to heat through.


Serve in bowls with 3 or 5 (odd number) popcorn kernels floating on top!! Yumm! 


~Note: you could also  garnish with chopped parsley or chives.
~Makes 8 medium servings
~can be made 3 days in advance, just slowly reheat

We are 7 days to turkey!! I am hoping you have your menu plan written down,  grocery list done and plan to buy non perishables this week. Also, if you are having guests bring a dish, let them know what you would like, so that they can plan accordingly. I wrote a event planner  on October 5th blog, check it out!  If you cannot set the table the night before, set it first thing in the morning. It gives you peace of mind and sets the day and mood going forward! I just love looking at my table when it is all set!

Sweet One will be offering a lovely dessert on Friday. I am excited as it is a usual Holiday dessert made a bit unusual!!

  2. Nice job!! I can hardly wait to get there!! So many good things on the horizon!! Let me know what to bring!! Family bowling should be a blast too! We are beyond excited!! We are excited for our Little Emma too!!
