Instant Pot Barbecue Pork Sandwiches



 I am gearing up for a BIG fourth of July celebration with family and friends and this is one of the favorites!

This Instant Pot recipe for Pulled Pork Sandwiches is the easiest and fastest! Who wants to wait all day smoking or slow cooking when you can have your sandwiches made perfectly in 2 hours?





Instant Pot Barbecue Pulled Pork Sandwiches

1 4- 5 lb boneless pork roast, cut into 2 inch chunks
2-3 T olive oil
salt and pepper
1 recipe JJ juice (recipe below)
Coleslaw
BBQ Sauce your favorite - I like Bulls Eye for my Pulled Pork

JJ Juice

1 c. chicken stock
6 cloves of garlic minced (or 6 cubes of frozen garlic, found at Trader Joes)
1/4 c. fresh lime juice
1/2 c. fresh orange juice
1 tsp. salt
1 tsp. ground cumin
1 tsp oregano
1/2 freshly ground pepper





Mix together all ingredients.

Instant Pot Method

Season the chunks of pork with salt and pepper. 




Using the saute on the IP, add the oil and saute the pork in batches in the hot oil. Removing the browned pieces to a clean plate or bowl.

This process will take some time, you cannot crowd the surface or the meat will not sear properly.

When all pieces have a sear, turn off the saute button on your IP and pour in the JJ sauce, stir.

Press "meat", then "pressure", it should say "high pressure", adjust the time to 30 minutes. Let the IP do it's "Magic"!! When finished, let the pressure release naturally for 15 minutes. Turn the vent to release the remaining pressure. Remove lid to the glorious pork, that practically shreds itself!! Shred with two forks, scoop onto buns and ......




You are ready for the BBQ sauce! Stir in you favorite BBQ sauce or simply top the bun with the delicious shredded pork and pour on the BBQ sauce. Top with a handful of slaw! Mmmmmmm...........life is good........
