Grilled trout with Green tomato salsa!

Do you have a over abundance of tomatoes? Well, I know quite a few of you do, as I have been getting e-mail after e-mail of readers asking if this is an unusual year. Well, it depends where you live. Here in the Pacific Northwest, we are having a record amount of sun, so, we are having a record number of tomatoes and various other vegetables!

Today I am offering you a quick and easy salsa! This bright fresh  and cooling salsa is the perfect topping for my grilled trout, however, it is also good on a hot dog or your favorite fish!

Grilled Trout with green tomato salsa

1 lb unripe green tomatoes, hulled and chopped (you may use any tomato you have, however, the flavor will be less tart)
1 T finely chopped fresh Italian parsley
1 T snipped chives
1 T finely chopped tarragon
1-2 T capers
2 T extra virgin olive oil
 Juice of 1 large lemon, plus more as needed
1/2 tsp sea salt

4 whole trout
Fine ssea salt
2 lemons sliced thin

Mix all the salsa ingredients together and season to taste with lemon, salt and pepper.

Prepare a charcoal or gas grill.

Option 1-Oil a cast iron skillet with olive oil. Season the trout inside and out with trout and stuff with slices of lemon. Place the fish in the cast iron skillet and put into hot grill, with lid down. Cook until opaque. Rule of thumb is 10 minutes per inch.

Option 2-Oil the grill grate.  Oil the trout skin with olive oil Season inside and out and stuff with lemon slices. Place trout on the grill directly over fire and cover. Cook until opaque. Rule of thumb is 10 minutes per inch.

Place the trout on a plate and spoon the salsa over. Garnish with Parsley.

A delicious easy meal that takes very little time!! Fresh and healthy! The wine is a local Washington state winery, I loved the name, and knew it was going to make a good gift for some occasion!! I tried it with my fish, it is really yummy!! I have ethree more bottles waiting for that special event...1/2 ASS!!

How to buy fresh fish-

1. Go to a reputable fish monger
2. Look for firm shiny flesh, when tuched it should bounce back.
3. Eyes should be clear as pictured below
4. Sniff the fish, it should not smell fishy
5. Check the gills, they should be bright pink/red and be wet not slimy or dry.
