Bailey Irish Cream Tiramisu- eggless





It's almost St. Patrick's day and I have a easy recipe that you will love!!

This is a quick Tiramisu Recipe and is perfect for any occasion!  The  ladyfingers are soaked in Baileys and coffee then layered with mascarpone whipped cream. It will be your new favorite no-bake dessert! Twenty minutes of preparation time and then just pop it into the refrigerator over night or at least 6 hours!

Herb Vinaigrette -Jamaica Inn's Chef Maurice




We are back from our island paradise in Ocho Rios, Jamaica....boo hoo! I love it there so much! Wee Bear says it's the only time in the year, I truly relax. He is right, I sit and sip coconut water in a lounge chair and stare lazily out to the sea. I enjoy watching the fishermen go by, the "Big Birds", who land in our tree and dive into the ocean right in front of me to catch a fish. I love taking my raft and heading down our stairway to the ocean and floating along with the waves. I love getting massage on our veranda, going to the local salon for a pedicure and manicure and talking to the locals about life in Jamaica. One of my very favorite things to do while in Ochi (local talk), is "Releasing the Sea Turtles". We were lucky enough this year to participate in the release. They are usually being hatched in August and September, but, this year there was a late group of 94! I wrote more about this below today's recipe.

Chocolate Shortbread Hearts




Years ago this recipe was taught to me in a Eva Kenly class. I have made them nearly every year since for Valentines day. It's been my go-to recipe for Chocolate Shortbread Cutouts ever since. It's the easiest recipe ever and the taste is heavenly! Now, years later, my daughter, and now my grand daughter is making these delicious hearts...this pictorial is my daughter Tink(Holly) and grand daughter, Madison Lee (my name sake). Four ingredients, very quick to make and bake!

Baked Tuscan Bread Soup

Wee Bear and I have spent a lot of time over the years in Europe on vacations, whether it be skiing, cruising, road trips or just renting a house for a while. By far our favorite soup is a Tuscan vegetable soup. In Tuscany it is called Ribollita which in Italian means reboiled or reheated and simply refers to it as left over vegetable soup. It is delicious in cold weather and light enough in calories that I can safely put it into the "Figure Friendly" category, sans the bread! The recipe looks humble, however, this recipe blew us away! Just look at these pictures! The soup is gently simmered and baked and the bread ends up almost like a dumpling, breaking apart in the savory broth. Wee Bear had to stop between spoonfuls and proclaim how much he loved it!

Champagne Chicken Breasts







On New Years Day and New Years Eve, I like to have champagne and I love to include it in the dishes I serve, knowing this is my last Hoorah before my sanity comes back.....well hopefully! My guests always ask for the recipe and think I’ve been cooking for hours, but it is done in little more than half an hour. And there is zero fat added; the chicken cooks in Champagne. So, in reality, I have already eased back into my usual eating pattern. Cooking with wine adds flavor but the calories of the alcohol burn off in the pan. Vermouth, Pernod or any number of earthy reds or whites can add depth to a dish, but for elegance of finish nothing beats Champagne.

Standing Rib Roast - Prime Rib


A Standing Rib Roast claims center stage during holiday season for a very good reason. It is the king of beef cuts. This is my favorite way of cooking a Prime Rib. Both my Slow Roasted Prime Rib and my adaption of Eva Kenly's recipe (here) are excellent methods for cooking a Rib Roast. I have done it both ways, both ways, equally delicious.

Twice Baked Potatoes- JJ's way






Twice-baked potatoes, much like biscotti require two – almost back to back – baking sessions. Thus, they are “twice-baked”. The first baking session is to soften the potatoes; you’ll need their centers to be soft enough to be easily scooped out. The second baking session is to warm the newly stuffed potatoes, crisp up their skins, and meld the magical cheeses.

Shopping in the grocery store is a lot more fun, as all the yummy ingredients are placed at the end of the isles and somehow make their way into my cart! Costco....well forget about the list.... Haha, my son-in-law will stop right here! He is one who sticks to the list at Costco....come on, who sticks to the list? JJ's Waldorf Salad

The Waldorf salad may be over a century old, but even today, it remains a timeless American classic. The apple and walnut salad was first created in the late 1800s at New York's legendary Waldorf Astoria Hotel. My first encounter with a true Waldorf Salad was in Home Economics. My Mother had a version of it that was popular in the 60's, that involved "Dream Whip"! Do any of you remember Dream Whip? It of course was sweet and my Mom loved her sweets. We had Waldorf Salad with Dream Whip about once a week!

"Lactation" Pumpkin Spice Muffins




These muffin's are moist and delicious, similar to carrot cake but with a Fall flavor. The rich cream cheese frosting will also remind you of carrot cake — which isn't a bad thing! Make sure you toast the walnuts before using them; toasting brings out their nutty essence. All in all simply delicious!

  I have always had a sweet tooth. It may have been because my mother had a major sweet tooth.... chocolate, candy, ice cream, it was readily available at our house. In the last couple of years, I’ve discovered the world of salted caramel, and boy that has taken my sweet tooth to an entire new level!!
