Instant Pot Disneyland Beef Stew




When you think of food at Disneyland, you might think of the Mickey Mouse ice cream, the hot dogs, the turkey legs or the pretzels, but, the real fans of the "Happiest Place on Earth" know that one of the real food stars is the Louisiana beef stew at New Orleans Square's French Market restaurant. And real cooking detectives know that you can totally recreate the dish at home in your Instant Pot!! Would you like in on this secret?

 


Instant Pot Disneyland Beef Stew



2 lbs. chuck roast, cubed
1/3 cup flour
3 T oil olive oil or canola
1 T seasoning salt
1 tsp pepper
3 garlic cloves  
1 small onion diced
4 red potatoes, peeled and diced
3 large carrots, peeled and rough chopped
3 stalks of celery, chopped
8 ounces button mushrooms, depending on size halved or quartered
8 ounces of beer, to deglaze
4 cups beef broth
2 T paprika
2 T Worcestershire
1 bag frozen peas
cornstarch for thickening


Toss the beef in the flour, seasoning salt and pepper.

Turn the Instant Pot to saute and heat the oil. 

Option- saute mushrooms, set aside. (this step isn't necessary)

Saute the beef on all sides.

Remove the beef to a plate or bowl and cook the onions and garlic until the onions are translucent.

Remove to plate or bowl.



Deglaze the Instant Pot with the beer, scraping all the yummy brown bits off the bottom. Add the stock, paprika and Worcestershire.



Add the potatoes, carrots, celery, beef, mushrooms and the onion mixture.

Put the lid on and set the valve to closed. 

Set the Instant Pot to High Pressure for 30 minutes. When finished allow a 10 minute natural release.

If your stew needs to be thickened, make a slurry of cornstarch and water, add to the instant pot and push the saute button. Stir and let the broth thicken.

Add the frozen peas.

You are ready to dish it up into a bread bowl/bowl.
